Christmas means many things to many people. To me, Christmas is a time to rejoice and be thankful for all I have been blessed with. It’s a time to be grateful that I am alive and can spend time with my amazing family.
Christmas is a time to put aside differences and celebrate all that is good in the World. Christmas is a time of giving and expecting nothing in return. Christmas is a time for remembering loved ones who are no longer with us. Christmas is a time for giving to those who are less fortunate than us.
Christmas is watching the amazement on my 2 year old grandson’s face the first time he saw my Christmas tree and remembering the joy Christmas brought to my boys when they were little.
But most of all Christmas is a time for love, forgiveness and understanding. What does Christmas mean to you?
The first of our Christmas celebrations started last night out on our verandah, sharing a grazing board of delicious food and lots of fabulous wine with a few friends and family.
As the evening went on and we ate, drank, chattered and laughed, the sunset was putting on an amazing show just for us – so perfect!
If you’re like me and don’t want to be tied to the kitchen all night, then a grazing board with hot and cold yummy things is definitely the way to go when you’re entertaining. You might have to spend a few hours preparing ahead of time, but then you can sit and enjoy the night with your guests.
So, what did I include on my grazing board?
- Homemade hummus with spiced toasted chickpeas
- Homemade garlicky eggplant dip
- Beef sliders with caramelised onions
- Smoked salmon on toasted sourdough with cream cheese and chives
- Sticky chicken ribs
- Prawns with ouzo, garlic, tomatoes & feta
- A few different cheeses and crackers
- Walnuts
- Red and green grapes
- And a scattering of rosemary and pomegranate seeds to add a touch of Christmas
Merry Christmas to you and yours!
Cheers
Vicki
