If you’re looking for a healthy snack that tastes great and is guilt-free, then you must try these Date, Nut and Seed Bars.
Not only are these bars morishly delicious, they would have to be the easiest recipe for anyone of any age to bake. The hardest part is waiting for them the cool down so that you can slice them into bars and eat them. BUT be warned, you won’t be able to stop at just one!
What you need
- 1 cup chopped fresh dates, firmly packed
- ½ cup pepitas (pumpkin seeds)
- ½ cup sunflower seeds
- ¾ cup natural almonds, chopped
- 1/3 cup cocoa nibs
- 2 tablespoons honey
- 1 teaspoon ground cinnamon
What to do
- Heat oven to 160oC (320oF).
- Line a 26cmx16cm baking tray with baking paper.
- Place all the ingredients in a bowl and mix well to combine.
- Pour the mixture into the prepared baking tray and press down firmly.
- Bake for 30 – 40 minutes or until it feels crisp when touched.
- Cool in the baking tray before slicing into bars with a sharp knife.
- Can be stored in airtight container for up to 10 days.
