“Hurry up cookies!”, is what my little grandson said while he was waiting for his Blueberry & Muesli Cookies to bake. I can’t blame him for being impatient. The aroma wafting from the oven was enough to make anyone’s mouth water.
These Blueberry and Muesli Cookies are buttery, crunchy and delicious, with a hint of honey for sweetness. They are a delicious treat for young and old. Once out of the oven, having to wait for the Blueberry and Muesli Cookies to cool down is even harder than watching them bake. So, why not blow on them to speed up the process?
These Blueberry and Muesli Cookies are quick to make and are a delicious a snack for little ones with a cup of milk, or a healthy snack in a kiddies lunchbox.
What you need
- 60g unsalted butter
- ¼ cup raw honey
- 1 cup muesli
- ½ cup dried blueberries
- ½ teaspoon vanilla extract or bean paste
- 1 egg – lightly beaten
- ¾ cup self raising flour
- pinch sea salt
Makes 12 cookies
What to do
Preheat the oven to 180°C
Line an oven tray with baking paper.
Place the butter and honey in a small saucepan to melt over a low heat.
In a separate bowl, combine all the dry ingredients, then pour in the melted butter and honey and stir through.
Add the egg and stir well to combine.
Place tablespoons of the mixture on the prepared tray. Spread them evenly, allowing room between each one to spread a little.
Bake for 12 – 15 minutes or until they turn golden.
Place on a wire rack to cool.
Store in an airtight container.
