What you need
- 150g softened unsalted butter
- ½ cup castor sugar
- ½ cup brown sugar
- 1 tsp vanilla extract
- 1 free range egg
- 1 ¾ cup plain flour
- 200g block of milk (or 70% cacao dark chocolate) broken into small chunks
- 1/2 cup halved macadamia nuts
What to do
Preheat oven to 160o C. Line baking trays with baking paper. Beat butter, sugars and vanilla until smooth. Add the egg and mix well. Stir in flour in 2 batches. Add nuts and chocolate – stir through. Place tablespoons of the mixture onto the trays – space out as they will spread. Bake for 12 – 15 minutes until lightly browned. Cool on a wire rack.
