Cauliflower, Corn and Cheese fritters


What you need

  • 2 cups cauliflower
  • 1 cup cooked corn (frozen works well)
  • 50g tasty cheese – grated
  • 1 egg – lightly beaten
  • ½ cup self raising flour
  • 2 TBLS olive oil

What to do

Wash the cauliflower and place in a pot with a cup of water on medium heat, cover and steam until it softens.
Drain, allow to cool then break up the cauliflower into small flowerets.
Combine the vegetables and cheese in a bowl
Add the beaten egg and stir through
Add the flour and stir to combine well.
Heat the oil in a shallow frypan on a medium heat
Place tablespoons full of the mixture in the pan (don’t overcrowd the pan)
Cook on both sides until cooked through and golden.

Makes 10 fritters
