Zucchini, carrot and mushroom fritters


What you need

1 medium zucchini – grated

1 small carrot – finely grated

4 button mushrooms – finely chopped

1 egg – lightly beaten

½ cup grated tasty cheese

½  cup wholemeal self raising flour

2 tablespoons olive oil

What to do

Squeeze the zucchini to remove any excess liquid.

Combine all the vegetables in a bowl.

Add the beaten egg and stir through.

Add the flour and cheese, stir well to combine.

Heat the oil in a shallow frypan on a medium heat.

Place tablespoons full of the mixture in the pan (don’t overcrowd the pan).

Cook on both sides until cooked through and golden.

Makes approximately 8 fritters.
