What you need
- 4 medium potatoes (I prefer waxy Desiree potatoes)
- 1 tablespoon fresh rosemary – chopped
- ¼ cup olive oil
- 1 teaspoon sea salt

What to do
Heat the oven to 180°C.
Peel and wash the potatoes.
Cut each potato in half lengthways, then cut each half into 4 chunks equal in size.
Place potatoes in a pot of cold water and bring to the boil on medium heat. Allow to boil for 5 – 7 minutes or until they become tender enough to prick with a fork.
Remove from the heat and drain well.
Return the potatoes to the pot and drizzle with oil, sprinkle with rosemary and season with the sea salt. Mix well.
Tip the potatoes into a baking dish
Bake for 30 – 40 minutes or until they become golden and crispy. Turn them from periodically during the cooking process.
