What you need
- 1 baby cos lettuce
- Handful of baby rainbow silverbeet leaves
- Handful of rocket
- 1/2 cup parsley
- 1/2 cup mint
- For the dressing:
- 1/4 cup extra virgin olive oil (best you can afford)
- 6 TBLS white wine vinegar
- 1 tsp Sea salt (or to taste)
- Fresh ground pepper
What to do
Rinse and the salad leaves and herbs thoroughly under cold water and drain well
Place salad leaves in a bowl. Pick the leaves from the herbs and add to the salad leaves.
Mix the oil, vinegar, salt and pepper in a small bowl and pour over greensand mix well just before serving.
Great as a side with a fish or meat dish.
TIP: Add some shaved pecorino cheese and serve with fresh crusty sour dough bread for a light healthy lunch.
