Baby leaves and herb salad

What you need

  • 1 baby cos lettuce
  • Handful of baby rainbow silverbeet leaves
  • Handful of rocket
  • 1/2 cup parsley
  • 1/2 cup mint
  • For the dressing:
  • 1/4 cup extra virgin olive oil (best you can afford)
  • 6 TBLS white wine vinegar
  • 1 tsp Sea salt (or to taste)
  • Fresh ground pepper

What to do

Rinse and the salad leaves and herbs thoroughly under cold water and drain well

Place salad leaves in a bowl. Pick the leaves from the herbs and add to the salad leaves.

Mix the oil, vinegar, salt and pepper in a small bowl and pour over greensand mix well just before serving.

Great as a side with a fish or meat dish.

TIP: Add some shaved pecorino cheese and serve with fresh crusty sour dough bread for a light healthy lunch.
