Silverbeet with Olive Oil and Lemon


Not only is this one of the easiest salads that you will ever make, it’s also extremely healthy and tasty. It’s great as a side with fish or steak, or eaten with just crusty wholegrain bread for a healthy delicious light lunch.

What you need

  • 1 bunch of silverbeet
  • 2 tablespoons extra virgin olive oil
  • 1 garlic clove crushed
  • Grated rind  of 1 lemon
  • Juice of 1 -2 lemons
  • Salt and Pepper

What to do

Remove and discard any very thick stems from silverbeet then wash thoroughly. Roughly chop the leaves and finely chop the remaining stems.

Heat the olive oil in a large, deep frying pan over medium heat. Add the crushed garlic and cook for 2 to 3 minutes.

Add silverbeet and cook for 2 to 3 minutes or until leaves are just wilted then remove from the heat.

Add the grated lemon rind and juice. Season with salt and pepper. Toss to combine and serve.
