Hummus not only tastes great and is good for you, but it’s fast and easy to make. Once you have made it once at home, you will never go back to eating store bought hummus again.
What you need
- ½ fresh chorizo
- 1 x 400g jar or tin of chickpeas
- 1 tablespoon tahini
- 1 garlic clove crushed
- ½ tsp sea salt
- 5 tablespoons extra virgin olive oil
- 3 tablespoons fresh lemon juice
What to do
Remove the skin from the chorizo. Chop into chunks and place in a blender and pulse until finely chopped (to resemble breadcrumbs)
Place in a frypan and cook on a medium heat until crispy. Drain on paper towel.
In the meantime, drain the chickpeas (reserve ½ cup of the liquid)
Put in a blender and pulse until smooth
Add the tahini, garlic, salt, lemon juice, olive oil and blend until well combined. Add a little of the reserve liquid if too thick.
Put hummus in a bowl and sprinkle the crispy chorizo. Serve with toasted flat bread or corn chips.
