Buckwheat Pancakes – a healthier alternative

Although most of us don’t have time for a leisurely cooked breakfast during the weekdays, there is always the weekend to look forward to for a more exciting breakfast like pancakes. And who doesn’t love pancakes?

The best thing about pancakes is that they are easy to make and taste great with just about anything (or nothing) on top.

There are a number of ways to make pancakes and ones made with Buckwheat flour, are definitely a favourite of mine because of their nutty flavour and nutritional value. Diets that contain buckwheat have been linked to reducing the risk of developing high cholesterol and high blood pressure – which can’t be a bad thing…right?

I love my pancakes topped with caramelised bananas and walnuts, or fresh berries with yoghurt and honey.

The sweetness of the bananas caramelised in freshly squeezed orange juice and the crunch of the walnuts, make it a hard combination to resist. DSC03358And the berries and yoghurt topping on buckwheat pancakes are not only delicious, but also healthy and guilt-free. What is your favourite topping?DSC03361My family love pancakes and a few weeks ago, I decided to make a batch for Sunday breakfast for my youngest son Anthony and his girlfriend Chala.dsc02613-e1508927884299.jpgWhen the pancakes were ready, I called Anthony and Chala to come up to the kitchen for breakfast. Anthony responded, “We’ll be up shortly mum, but Chala won’t be eating. She has somewhere to go”. I must admit that I was a little disappointed that Chala couldn’t stay to try my pancakes.

Before long, they came upstairs to the kitchen. Their faces lit up when they saw what I had prepared. And when Chala saw that the pancakes were topped with caramelised bananas and maple syrup, she couldn’t resist and decided to change her plans and stay for breakfast, which of course made me happy because it meant I could spend some time with them both.
