If you’ve been following Meatballs and Muffins the past couple of weeks, then you’ve probably read my other posts on healthy balls and bars I’ve been creating. If you haven’t, then just scroll the HOME page and you’ll easily find then.
This is a new combination I came up with yesterday that I really liked and thought you might too. My inspiration was goji berries, mainly because my youngest son’s lady tells me how much she loves goji berries – so these are for her! These delightful little Gojis, Nuts & Seeds Protein balls of goodness are filling and very yummy. They are made with goji berries, nuts, seeds and protein powder, proving a boost of energy when you need it to get through the hardest part of your day.
Goji berries are a great source of vitamins and minerals. These tiny berries contain all 8 essential amino acids, have a high level of antioxidants and help boost the immune system.
The carbohydrates in goji berries are also complex carbs. This means your blood sugar will raise slowly, reducing your risk of a sugar crash afterwards.
Although goji berries provide many health benefits, they can interact with medications, so always talk to your doctor before you begin eating them. Also, goji berries are high in vitamin A, so you may want to limit how much you eat to reduce the risk of vitamin A toxicity.
