It’s now week 6 of my challenge to replace white sugar with healthier alternatives in my cooking and this week it’s all about creating healthier cookies! So stick with me and I’ll tell you all about it.
Now, like most young parents these days, my son and his wife are very careful about what they feed their little boy and sweets (or more precisely, sugar), is definitely a ‘no no’. So when it comes to giving my grandson a snack, I am always conscious of their wishes and try to only give P healthy options, like fruit and these Healthy Muesli Cookies.The other day when I was looking after P, I realised I didn’t have anything “P appropriate” to give my grandson for a snack, so I decided to bake a batch of these Healthy Muesli Cookies.
We had a great time together baking them and I’m not sure who had more fun, but P definitely loved licking the spoon at the end. It brought back beautiful memories of when my sons were little and would gather around the bench whenever I baked anything sweet, ready to lick the wooden spoon and bowl – they were such wonderful days 🙂
These delicious cookies are made with honey and muesli and would have to be the quickest and easiest cookies to make. So why don’t you get your kids to help you make a batch today. All you need is a bowl and a wooden spoon, 5 minutes to put them together and then about 15 minutes to cook. They are REALLY delicious eaten while they are still warm with a glass of milk – so make sure you have one too, because after all, you still have a child hiding inside you somewhere!!
Although these Muesli Cookies are very delicious and healthier than many other sweet snacks, they should still only be a ‘sometimes food‘, because too much of anything is not a good thing as far as I am concerned!

- 60g unsalted butter
- ¼ cup raw honey
- ¾ cup muesli
- ¼ cup macadamia nuts* – roughly chopped
- ¼ dried cranberries
- ¼ teaspoon ground cinnamon
- ½ teaspoon vanilla extract or bean paste
- 1 egg – lightly beaten
- ¾ cup self raising flour
- pinch sea salt
Makes 12 cookies
What to do
Preheat the oven to 180°C
Line an oven tray with baking paper.
Place the butter and honey in a small saucepan to melt over a low heat.
In a separate bowl, combine all the dry ingredients, then pour in the melted butter and honey and stir through.
Add the egg and stir well to combine.
Place tablespoons of the mixture on the prepared tray. Spread them evenly, allowing room between each one to spread a little.
Bake for 12 – 15 minutes or until they turn golden.
Place on a wire rack to cool.
Store in an airtight container.
*If you want to make these nut free, just omit the macadamia nuts and increase the muesli by ¼ cup, which means you need a total of 1 cup muesli.
