Hummus not only tastes great, it’s good for you. It’s fast and easy to make and once you have made it at home, you will never go back to eating store-bought hummus again.
What you need
- 1 x 400g jar or tin of chickpeas
- 3 tablespoons tahini
- 1-2 garlic cloves crushed
- ½ tsp sea salt
- 5 tablespoons extra virgin olive oil
- Juice of ½ a lemon
- 1 teaspoon of finely chpped parsley
What to do
Drain the chickpeas (reserve ½ cup of the liquid)
Reserve 1 tablespoon of the chickpeas for decoration and put the remainder in a blender – pulse until smooth.
Add the tahini, garlic, salt, lemon juice, olive oil and blend until well combined. Add a little of the reserved liquid if too thick.
Put hummus in a bowl and sprinkle the reserved chickpeas and parsley. Serve with toasted flatbread or corn chips.
