Summer Fruit Salad

If you read my last post, then you’ll know this is the Summer Fruit Salad that I promised to share with you. It’s topped with Greek yoghurt, a sprinkling of toasted muesli and a drizzle of honey. It’s so simple it’s almost embarrassing, but if you’re after something refreshing, delicious and very nutritious, then this is it.

This Summer Fruit Salad is a great option for busy parent’s to make for a quick healthy breakfast, a light lunch or a delicious summer dessert.

All you need to do is choose your favourite summer fruit (include some delicious raspberries, of course). Cut the large fruit into bite size pieces and put them in a glass or bowl. Add a dollop of natural Greek yoghurt, then a drizzle of honey and a sprinkling of toasted muesli and … voila! Your kids will love it too!DSC03494

Another option is to serve this Summer Fruit Salad in a beautiful glass, drizzled with a little Frangelico liqueur (or any other liqueur you like), topped with salted caramel ice-cream and toasted chopped almonds, and you have a yummy adult summer dessert that’s sure to impress your guests!DSC03483
