Summer means green beans!

With Winter behind us, I”m thinking about the great vegetables that will soon be in season and all the dishes I will be able cook for Sunday dinner.

A summer vegetable that is always a family favourite are green beans, which is great because green beans are a rich source of vitamins A, C, and K, and of folic acid and fibre. Many studies have suggested that including more plant foods, such as green beans, in the diet decreases the risk of obesity, diabetes, heart disease.

One dish that I love to make throughout summer for Sunday dinner is GREEK STYLE GREEN BEANS. I make this dish the way my mum used make it and the way her mum taught her to make it, the only difference is that my mum and her mum used freshly picked green beans and sweet ripe tomatoes from their home garden.

When you a buying green beans you can easily tell if they are fresh because they are bright green in colour and firm to touch, avoid them if they are limp and dull looking.
