Grilled Asparagus with Toasted Walnuts & Feta

I came up with this dish recently quite by accident and I loved it so much that I decided to share it with you as part of my series of asparagus dishes. But, there is a story behind this dish.

It was last Friday when I had gone shopping to pick up a few things, including asparagus to make ‘dinner for one’. You see everyone at my place had plans for dinner that night (or so I thought), so I decided rather than just have boring cheese toasties or scrambled eggs, I would cook myself something special – rack of lamb with red wine, rosemary and oregano, asparagus salad, golden roasted potatoes and Greek salad. I also had a lovely bottle of red wine in mind that would go well with the lamb.

It was about 5 o’clock when I started to prep the rack of lamb and my son Anthony came home. His normal routine on Friday’s is to go out for dinner with his lady, but when I asked him where they were going that night, he said “Chala is going out for dinner with work friends so I’m staying home”.  YES! – I thought – now it would be ‘dinner to two’. Just as well I had bought 2 racks of lamb – was it mother’s intuition? I wonder.


It was a lovely warm night, so when dinner was ready we sat out on the balcony overlooking the treetops and watched the sunset while sharing a meal that I had lovingly prepared for my baby boy and I. It was another of those moments I will treasure.IMG_0072 2Now back to the asparagus dish. What I really love about this dish is the contrast of flavours – the nutty flavour of the toasted walnuts, the saltiness of the feta and the delicate earthiness of the asparagus – creates such an tasty combination that work so well together.
