What you need
- 2 free range eggs
- 2 rashes good quality bacon
- 2 slices wholegrain sliced bread
- Salt and pepper
What to do
Heat the griller to a medium heat
Line the griller tray with baking paper and place the slices of bacon on top
Place the tray under the griller and cook the bacon to your desired level of crispiness. The amount to time may vary depending on the thickness of the bacon. Turn the bacon over to crisp on both sides.
Once cooked to your liking, place the bacon on paper towel to drain any excess fat and keep warm.
Carefully break 2 eggs into a bowl without breaking the yolk (and check if they are fresh enough to poach).
Half fill a medium sized pot with water and bring to a simmer.
Add 2 TBLS white vinegar – helps to set the egg white.
Swirl the water around to create a whirlpool and carefully pour the eggs into the simmering water.
Simmer gently for approximately 2 minutes for soft poached eggs.
In the meantime, toast the bread to your liking.
Drain the eggs on paper towel.
Carefully place the eggs on the toast, season with salt and pepper and serve with the bacon.
