Asparagus with Shaved Parmesan and Balsamic

fullsizeoutput_464This is a very simple tasty salad or side dish that goes great with spring lamb, grilled chicken or fish.

What you need

  • 1 bunch fresh asparagus
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 teaspoons good quality aged balsamic vinegar
  • Freshly ground pepper
  • 2 tablespoons shaved Parmigiano-Reggiano (or parmesan cheese)

What to do

Heat oven to 180°c.

Break off and discard the woody end of the asparagus, then bake for 8 minutes or until asparagus is tender but still has some crunch.

Place on a dish and drizzle the olive oil and balsamic over the top. Sprinkle a little freshly ground pepper and the shaved parmesan, then serve.

  1. Oh very nice! And what about adding some cherry tomatoes for a touch of color plus some bitter-sweet taste (I guess it would also go well with the balsamic and Parmesan used with the asparagus)?
