This is a very simple tasty salad or side dish that goes great with spring lamb, grilled chicken or fish.
What you need
- 1 bunch fresh asparagus
- 2 tablespoons Extra Virgin Olive Oil
- 2 teaspoons good quality aged balsamic vinegar
- Freshly ground pepper
- 2 tablespoons shaved Parmigiano-Reggiano (or parmesan cheese)
What to do
Heat oven to 180°c.
Break off and discard the woody end of the asparagus, then bake for 8 minutes or until asparagus is tender but still has some crunch.
Place on a dish and drizzle the olive oil and balsamic over the top. Sprinkle a little freshly ground pepper and the shaved parmesan, then serve.
Oh very nice! And what about adding some cherry tomatoes for a touch of color plus some bitter-sweet taste (I guess it would also go well with the balsamic and Parmesan used with the asparagus)?

Thank you. Yes, of course you could add cherry tomatoes or even semi sun-dried tomatoes are great in it.
