Banana muffins filled with oozy Nutella is an indulgence worth the extra 20 minutes on the treadmill. They are truly delightful at any time, but they are even more amazing when the chocolate in the middle is still warm and gooey.
There’s not much more to say really, other than, you NEED to try making these yourself to find out how good they really are. It’s an easy failsafe recipe that will impress your family and friends – should you choose to share them, that is 🙂 What you need
- 2 medium very ripe bananas – mashed with a fork
- 125g softened butter
- ½ cup castor sugar
- 2 large free range eggs – lightly beaten
- 1 teaspoon vanilla extract
- ¾ cup plain flour
- ¾ cup self raising flour
- 1 teaspoon bicarbonate soda
- Nutella
What to do
Heat oven to 180° Celsius . Line a muffin tray with paper muffin cases.
Place the butter and sugar in large mixing bowl and beat with an electric mixer until light and creamy.
Add eggs one at a time and beat on medium speed until combined, then add mashed bananas and vanilla and continue mixing until well combined.
Sift flours and bicarbonate soda into the sugar and egg mixture and beat on slow speed until just combined.
Fill each muffin case half-way with the mixture.
Add a teaspoon of Nutella in the middle of each muffin, then fill each case ¾ full with the remaining mixture.
Bake for 15 – 18 minutes
Remove from the oven and cool on a wire rack.
